  • 8 oz Brie cheese cut into small pieces
  • 1/2 cup fresh cranberries washed and dried
  • 2 tbsp honey for drizzling
  • 1 tsp fresh thyme or rosemary chopped, optional

Method
 

  1. Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper to prevent sticking.
  2. Roll out the puff pastry on a lightly floured surface to smooth out creases, then use a small cookie cutter or knife to cut into 12 even squares.
  3. Place the pastry squares on the prepared baking sheet, spacing them evenly apart.
  4. Top each pastry square with a small piece of Brie cheese, pressing gently into the center.
  5. Distribute fresh cranberries evenly over the Brie on each square, pressing down slightly so they stay in place.
  6. Drizzle a little honey over each bite for sweetness, then sprinkle with chopped thyme or rosemary if using.
  7. Bake in the preheated oven for about 12-15 minutes, or until the pastry is golden and flaky and the Brie is bubbly.
  8. Remove from oven and let cool slightly for a few minutes—this helps the cheese set just enough to hold its gooey texture.
  9. Serve warm, garnished with extra cranberries or herbs if desired, and enjoy the perfect blend of crispy, creamy, and tart flavors.
