Method
 

  1. Combine molasses, ground ginger, cinnamon, and cloves in a small saucepan. Warm over low heat, whisking until the mixture is smooth and fragrant, about 2-3 minutes.
  2. Pour in the milk and vanilla extract, continuing to whisk. Heat the mixture gently until steaming, but not boiling, about 3-4 minutes. This allows the flavors to meld and the milk to warm through.
  3. Meanwhile, brew your espresso or strong coffee using your preferred method and pour it into mugs.
  4. Once the milk mixture is steaming, remove it from heat and whisk vigorously to create a light froth.
  5. Pour the warm, frothy milk into the mugs over the brewed coffee, using a spoon to hold back the foam if desired, then spoon the foam on top.
  6. Optional: drizzle honey or maple syrup over the foam, and sprinkle a pinch of cinnamon or nutmeg for garnish.
  7. Serve immediately and enjoy the warm, fragrant sip of your homemade gingerbread latte.
