  • 1 can diced tomatoes 14.5 oz can
  • 1 can black beans drained and rinsed, 15 oz can
  • 1 can corn kernels drained, 15 oz can
  • 1 packet taco seasoning mix about 1 oz packet
  • 2 cups chicken broth
  • 1 small onion diced
  • 2 cloves garlic minced
  • 1 tbsp olive oil
  • to taste salt and pepper

Method
 

  1. Heat the olive oil in a skillet over medium heat, then add the diced onion and cook until translucent and fragrant, about 3 minutes.
