- Use a sharp knife or cookie cutter to cut the bread into small, 1-inch rounds or squares, creating uniform bite-sized pieces. Set aside.
- In a mixing bowl, combine the softened cream cheese with chopped parsley and dill. Mix with a fork until the herbs are evenly distributed and the mixture is smooth and fragrant.
- Spread a thin layer of the herb cream cheese onto each bread piece, using a small spatula or butter knife. Keep the layer light but even to prevent sogginess.
- Add a small slice of deli meat on top of the cream cheese spread, pressing gently so it adheres well. Follow with a pickle slice or a spoonful of sun-dried tomatoes for bursts of flavor.
- Place another bread piece on top of each assembled bite, gently pressing to seal the filling inside. Repeat with all pieces.
- Arrange the assembled bites on a small baking sheet. Optionally, brush the tops lightly with melted butter or olive oil, then bake in a preheated oven at 180°C (350°F) for about 8-10 minutes, until the edges are golden and the filling is warmed through.
- Remove from the oven and let the bites rest for a couple of minutes. They will firm up slightly, making them easier to serve without falling apart.
- Arrange the bites on a platter, garnished with extra herbs if desired. Serve slightly warm or at room temperature for the best flavor and texture.
Notes
For extra flavor, try swapping the herbs or adding a spicy spread. Make sure the cream cheese is softened for easy spreading, and don’t overfill to keep bites neat. These are best enjoyed fresh but can be stored in the fridge for up to 4 hours before serving.
