- Line the baking dish with parchment paper for easy removal later.
- Combine the peanut butter and honey in a large mixing bowl and microwave for about 20 seconds until warm and easily stirrable.
- Whisk the mixture together until smooth, fragrant, and slightly runny, about 30 seconds.
- Add the oats to the bowl and fold them into the wet mixture using a silicone spatula, ensuring they’re fully coated and begin to stick together.
- Pour in the chocolate chips and gently fold them into the mixture, distributing evenly.
- Transfer the thick mixture into the prepared baking dish, pressing it down firmly with the back of a spatula or your fingers to create an even layer.
- Cover the dish with plastic wrap and refrigerate for at least 2 hours, or until the mixture is firm and chewy.
- Once chilled and firm, lift the mixture out of the dish using the parchment paper and cut into 12 equal bars.
- Serve the chewy bars as a satisfying snack or sweet treat, enjoying the gooey pockets of chocolate and nutty flavor with each bite.
Notes
For added flavor, sprinkle a pinch of sea salt on top before chilling. These bars store well in an airtight container for up to a week.
