  • 1 cup creamy peanut butter smooth and natural preferred
  • 1/2 cup honey or maple syrup for vegan option
  • 2 cups old-fashioned oats preferably rolled oats
  • 1 cup semi-sweet chocolate chips

Method
 

  1. Line the baking dish with parchment paper for easy removal later.
  2. Combine the peanut butter and honey in a large mixing bowl and microwave for about 20 seconds until warm and easily stirrable.
  3. Whisk the mixture together until smooth, fragrant, and slightly runny, about 30 seconds.
  4. Add the oats to the bowl and fold them into the wet mixture using a silicone spatula, ensuring they’re fully coated and begin to stick together.
  5. Pour in the chocolate chips and gently fold them into the mixture, distributing evenly.
  6. Transfer the thick mixture into the prepared baking dish, pressing it down firmly with the back of a spatula or your fingers to create an even layer.
  7. Cover the dish with plastic wrap and refrigerate for at least 2 hours, or until the mixture is firm and chewy.
  8. Once chilled and firm, lift the mixture out of the dish using the parchment paper and cut into 12 equal bars.
  9. Serve the chewy bars as a satisfying snack or sweet treat, enjoying the gooey pockets of chocolate and nutty flavor with each bite.

Notes

For added flavor, sprinkle a pinch of sea salt on top before chilling. These bars store well in an airtight container for up to a week.
